Chocolate from specific ‘Catonga’ cocoa variety, from a cocoa plantation in Saloy, Davoa, Philippines.
We already had a chocolate of it in our range of Fossa chocolate legends, a pure variant< /a>. When we tasted it and drank it, we were more than happy to try this chocolate from Auro. In addition to being a chocolate maker, Auro is also a distributor of cocoa beans to other makers, so it is all the better that they also made their own chocolate from this cocoa.
This is a milk chocolate, with 50% cocoa. All this specific ‘Luna’ cocoa from the Philippines.
Auro has set up the flavor wheel on the right for the flavor profile of this cocoa. The makers mention flavor notes of spices, dried herbs and forest blossoms in this bar.
Not just any milk chocolate, thanks to the beautiful specific cocoa from a single plantation and the processing. With milk chocolate, the quality of the milk powder also plays a role, here deliberately a mix of whole and skimmed milk powder. And finally, the sugar used – muscovado sugar was chosen here – a sugar with little processing, and (therefore) more flavor, more complex, a bit darker/earlier. Certainly not a bad choice, if you know it you will certainly taste it.
Ingredients: cocoa mass, muscovado sugar, whole milk powder, cocoa butter, skimmed milk powder.
