Description
Giff Laube is a cacao farmer, cacao expert, and entrepreneur based in Nicaragua. He is best known for spending years searching for rare, genetically pure Criollo cacao trees, often finding them in backyards or on neglected plots of land. And he succeeded! After years of searching and DNA testing, he was able to establish a small plantation of genuine Criollo trees. The beans from these trees are now used to make this exceptional chocolate.
Sirene describes the flavour like this: “Unusually for Sirene there is a line of astringency in the opening flavour notes followed by a mild and really interesting nutty flavour (but no nuts are in there for those of you with nut allergies).” We couldn’t agree more! The bar is indeed quite mild, opening with a fresh, slightly dry and gently bitter note before giving way to creamier, nutty flavours. Sirene is also known for using a relatively high amount of cocoa butter in their bars, resulting in an exceptionally smooth, creamy melt.

Allergen information from the maker: Produced in a nut-free facility. Free from soy, gluten, and milk. However, the chocolate is made in a facility that also processes milk powder and may therefore contain traces of milk.
