Description
Slightly bitter, but nice and fruity sour. The cocoa from Kokoa Kamili from Tanzania is more often used in 100% chocolates, and that seems like a good and logical choice – the cocoa is very fruity.
As Cacaonect – distributor of the cocoa – describes the taste of the cocoa: “The beans have a fantastic sourness enriched by fruity notes, specifically apples and cherries. There is a very interesting dried vegetative undertone which is complementary to the pallet of fruity flavors. The after tone has a good chocolatey taste combined with an extremely fruity explosion and a good acidity. The bitterness is a very friendly one.”
Of course it is then up to the chocolate maker to grind & roast the cocoa, and every 100% chocolate from this cocoa is just a bit different, which is what makes chocolate so much fun. You can also taste the versions of, for example, Fossa and Raaka for a nice comparison.
