Rare wild cacao from Bolivia, but in a milk chocolate version!
The Maple Milk bar from Palette de Bine is, just like the dark Wild Harvest 70%, made with rare wild cacao from Bolivia. By popular demand, caramelized milk has been added, and it turned out to be a great success! It earned a Canadian gold medal, as well as a silver at the World Chocolate Awards in 2020–2021.
This cacao is only available once every two years because the regions where the beans grow are difficult to access. The beans are also very small, which means they must be roasted with great care. This helps preserve their subtle, fruity flavors. With 60% of this special cacao, the bar remains relatively dark, but the addition of milk and maple sugar gives it a smooth, creamy sweetness with notes of fig, caramel, and jasmine.
Where the pure Wild Harvest 70% focuses on the wild character of the beans, this Maple Milk bar integrates them into an almost praline-like chocolate experience. It’s highly recommended to taste them side by side to compare the different expressions of wild cacao!
