Description
One of the rarest and most sought-after cocoa varieties in the world.
As Palette de Bine themselves explain: “Each year, only between 18 and 20 tons of this unique cocoa are available. We paid twice as much as for our other cocoas, which are already on average four times more expensive than the market price.”
These beans come from the small village of Chuao, located 6 km from the sea in an isolated part of the Aragua Valley in northern Venezuela. Traditional techniques passed down from generation to generation are used for harvesting, fermenting, and drying the cocoa.
Palette de Bine then transforms this cocoa into chocolate using a slightly adapted process compared to their usual methods (with guidance from chocolate expert Chloé Doutre-Roussel). The chocolate blocks are aged for more than two years (!) to soften the tannins of this raw and powerful cocoa. Because, as they say: “This chocolate has the temperament of a teenager!!”
