An intense bar with a unique and wild character from Palette de Bine.

Malekula Island is an island in Vanuatu, an island nation in Oceania located between Fiji and the Solomon Islands. A special variety of cocoa is grown here, which Palette de Bine came into contact with in the following way:

“This exceptional cocoa from Vanuatu was introduced to us via Daniel O’Doherty of Cacao Services. Daniel provides agricultural and scientific advice on cocoa production systems around the world. He works with Olivier Fernandez of Gaston Chocolat in Port Vila. Fernandez mainly works with small-scale plantations in the northeast and northwest of the island of Malekula. His job is to improve cultivation, fermentation, and drying methods—which enhances the flavour of the beans—and then distribute the beans overseas. This heirloom Amelonado-type cocoa has a unique and wild character, with deep and complex flavour notes supported by an almost tobacco-like intensity.”
