Dark chocolate from Finca La Rioja in Mexico. As we see it now, Casa Cacao’s favorite chocolate for your Chocolate Sellers – of course the harvest will vary every year and so will the processing of the makers, but at first sight and taste we love this chocolate! Processed into chocolate by Casa Cacao in Girona.
Taste note from the makers: We emphasize the color, very light, brown / red. We find a mild lactic acidity, with notes of raisins, mango and apricot and a delicate aftertaste of raw almonds.
A nice extra fact: the wrapper around the chocolate bar is made of cocoa shells from the cocoa bean used in the chocolate – beautifully conceived and executed – so you get even more of a connection between chocolate and the cocoa – the first thing you see is at the bars of Casa Cacao the color of the cocoa shells in the paper, and then of course where the cocoa comes from, in description and in the precise coordinates. Well done. And then you still have to start tasting, where the light color (indeed) will immediately stand out with this bar. Even if you smell this bar you will (as far as we are concerned) really enjoy it, it smells good.
And yes, it’s ‘three-star cocoa’ – the chocolate is made by Casa Cacao and that’s the project of Jordi Roca of El Celler de de Can Roca, the three-Michelin-starred restaurant in Girona (and several times named best restaurant in the world by Restaurant Magazine). world named). Then you know that you pay a little extra for the exclusivity. We don’t mind – no chocolate for everyday of course, or for weekly, just to try once in a while. And nice to compare with other chocolates with cocoa from Mexico.
