Description
Beautiful chocolate from Casa Cacao (by Jordi Roca of El Celler de Can Roca, the three-Michelin-star restaurant in Girona).
What stands out first about this chocolate is its color — remarkably light, a shade you wouldn’t expect from a dark chocolate (unless you’ve encountered this type of cacao before).
Then the flavor… raisins appear quickly, along with a gentle fruitiness. It’s very mild, and even gives a somewhat milky sensation — though no milk is added, of course.
A remarkable bar. Awarded silver at the Academy of Chocolate.
Also fascinating to compare with chocolate from the Dutch top maker Krak — their Don Moises bar comes from the same cacao plantation and beans.
The makers say:
“Cacao Criollo (90%) of ancestral genetics collected and fermented at Finca La Rioja by the great-grandson of Don Moisés, José María Pascacio. At the Casa Cacao workshop, we select the cacao by hand, roast it very delicately, crack and winnow the beans, add organic cane sugar and organic cocoa butter, and then conche it for a minimum of 48 hours.”
