A milk chocolate, but with 80% cocoa. We don’t really know why more makers don’t make something like this, because this way you combine the good of a lot of cocoa (and little sugar) with just that little bit of milk, which is so attractive for milk chocolate lovers – just a little softer and creamier than dark chocolate.

We already like Chocolat Madagascar for other reasons: chocolates made 100% in Madagascar, and from cocoa from Madagascar. They have also made very nice vegan chocolates with cashew nuts instead of milk. And in pure everything from 68% with cocoa nibs to 100% pure. Well, now we have this milk chocolate added to it. And a truly unique one.

While milk chocolates in the supermarket, together with white chocolate, have the lowest cocoa percentage of all chocolate bars, in ‘our’ world of craft chocolate it is common to make milk chocolates with a slightly higher cocoa percentage. So not 30% but rather 50% cocoa or occasionally a little more. These chocolates are also called ‘dark milk’ thanks to the higher cocoa percentages. Even this type of milk chocolate is not standard, but Chocolat Madagascar has taken this idea and created an ultimate version of it: we can call it extra extra dark milk.

We find it amazing that despite 80% cocoa, there is still enough left over for just a little milk and sugar and that you really have the experience of milk chocolate. Sure, much more cocoa flavor than ‘regular’ milk chocolate, that goes without saying, but this bar really has a nice creaminess.

The cocoa from Madagscar gives somewhat fruity taste notes, but that is relatively light. Then the milk flavor emerges, which merges with the darker flavor notes and the characteristic ‘chocolate flavor’ that results from roasting. Even then it is not over yet, the taste ends soft again, perhaps slightly nutty, and above all you get a nice creamy feeling in the mouth. All in all, we as Chocolate Sellers were really surprised by this bar and its taste.
