Especially for the holiday season, the chocolate makers at Pump Street have created this exquisite set of winter-themed chocolates.

Given that they are also a bakery—and quite an exceptional one at that—it comes as no surprise that the three chocolates in this collection draw inspiration from their bakery offerings.

The beautiful watercolor illustrations on the bar wrappers truly shine within this set; it is remarkably ingenious how they have managed to craft something so stunningly beautiful using nothing more than paper and card! We already suspected it would make a wonderful gift, but once we held the set in our hands and slid it open, we found it even more lovely than we had imagined.

And now, for the three chocolates included:

Maple Pecan Milk Chocolate
“Inspired by one of our bakery classics—our Canadian butter tart. The smoky notes of maple syrup, the crunch of pastry, and the toasted pecans come together perfectly in this bar. It is crafted using our own 55% milk chocolate, made from bean to bar with cacao beans from Hacienda Victoria in Ecuador. We’ve incorporated crunchy, crushed pastry for a buttery flavor, along with maple syrup and small pieces of pecans—caramelized with maple syrup and demerara sugar. It’s the perfect choice for anyone who loves pecan pie or a stack of pancakes drizzled with maple syrup.” Gingerbread 62% Dark Chocolate
“Our Gingerbread bar is crafted using our own freshly baked gingerbread cookies—a seasonal classic. These cookies are spiced not only with ginger, but also with cinnamon and cardamom. Paired with our 62% dark chocolate—made from cacao beans sourced from West Papua—this creates a rich, deep seasonal flavor profile with a long-lasting, warm, spicy finish. Perfect for anyone who enjoys gingerbread, *Lebkuchen*, *Zimtsterne*, or other richly spiced chocolate treats.”

Panettone 70% Dark Chocolate
“We have spent years perfecting our artisanal panettone in our bakery. It is rich and aromatic, packed with candied fruit and topped with almonds and sugar crystals—all of which are captured in this chocolate bar. Our dark chocolate, crafted from cacao beans from Grenada (sourced from the organic Crayfish Bay estate), is infused with our own panettone. The bar also features pieces of orange peel and crunchy bits of toasted almond and sugar. An ideal choice for those who love panettone or other richly filled Christmas cakes.”

Cocoa beans, cane sugar, cocoa butter, panettone (9%) (wheat flour with added calcium, iron, niacin, and thiamine; butter (milk); egg yolk; sugar; water; honey; salt; panettone essence (essential citrus oils, vanilla); orange; vanilla paste), candied orange peel, almonds, and sugar crystals. Dark chocolate contains at least 70% cocoa solids.

Cocoa beans, cane sugar, pecans caramelized with maple syrup (17.4%) (pecans (nuts), pure maple sugar, demerara sugar), cocoa butter, skimmed milk powder, pastry (7.4%) (wheat flour with added calcium, iron, niacin, and thiamine; unsalted butter (milk); eggs; powdered sugar; salt). The milk chocolate contains at least 55% cocoa solids.
