No, pure (freeze-dried) juice of cocoa fruit is used here.
As you hopefully know, cocoa is a fruit. And for making chocolate, the seeds (cocoa nibs) are normally used, which are first fermented in the pulp, the flesh of the cocoa. Then the cocoa seed is roasted as standard, and sugar is added. The pulp is then often just thrown away. Fortunately, things are different these days, because there are now various applications for the cocoa fruit itself. Juices are made with it (a well-known one is Kumasi, which can also be found in your local supermarket) – and since the pulp has a super tasty tropical flavour, it is not a bad idea at all. Eating fresh cocoa like this is delicious, but this way you can also taste the delicious tropical sweetness very well. The flavour of the cocoa fruit is often compared to lychee.
Chocolate Tree goes one step further and uses the juice of the cocoa fruit for the chocolate. Say as a replacement for sugar, and to create a bar that is made entirely of cocoa.
Of course, we already have chocolates made entirely of cocoa – with 100% cocoa – there are many fans of that among our customers, others don’t like it because they prefer it a bit sweeter and less strong in taste. This can be a nice variant. This does contain sweetness, sugar, but then entirely from the cocoa fruit. In terms of sugar percentage, if you look at the nutritional values, it contains 25 grams of sugar.
A very nice creation, made from cocoa from Guatemala, harvested around Lake Lachua where the cocoa grows between other trees such as bananas and cardamom.
