The newest chocolate from Chocolatoa, made with cocoa from Ecuador—more specifically “Unocace Chacarita,” sourced from Unión de Organizaciones Campesinas Cacaoteras del Ecuador, a cooperative of շուրջ 1,000 affiliated cocoa farmers. From the Chacarita variety.
It offers a well-balanced profile with light (dark) fruitiness without acidity, a certain dryness yet also a creamy texture, alongside mineral and woody flavor notes.
An intriguing bar, best enjoyed by letting it melt slowly, allowing the woody/vegetal notes to gradually emerge. The fruitiness briefly comes forward to say hello, then gently fades again—ultimately, it’s best to discover for yourself what you experience. A cocoa from Ecuador unlike what we’ve tasted before, as floral and fruity notes are often more dominant.
The cocoa cooperative describes the flavor notes as: woody, sunflower seeds, red-brown fruit.
