Feitoria do Cacao celebrated their 10th anniversary in 2025. They used this moment to finally obtain a cacao they had long admired, and to use it for a special new creation.
Made from “Almendra Blanca” cacao from Mexico. This cacao is cultivated at Hacienda Jesús María in the Chontalpa region of Tabasco, within an agroforestry system (where cacao is grown alongside other trees, and crops such as coffee and vanilla are also cultivated).
A rare white cacao, which Feitoria do Cacao uses to produce a dark (72%) chocolate.
The makers say:
“It was love at first taste when we encountered Carmelo cacao in Amsterdam in 2016. At the time, it was unavailable for sale, yet striking enough that we never forgot it. It stayed with us — in memory and on the palate — as the cacao of our dreams. In 2025, the year we celebrate our 10th anniversary, this reunion finally happened, like a blessing.
Carmelo Almendra Blanca originates from the coast of Soconusco. Its rare white beans lend it an uncommon elegance and complexity. With a dense, enveloping creaminess, it reveals dazzling flavours such as raisin, yellow fruits, pine nut and fresh cream.
The reunion took time, but it happened at the right moment. Over the years, we gained the experience and knowledge needed to express the identity of this rare cacao — delicate, profound and full of character.
