Description
Made from 100% cocoa from the Solomon Islands – we had to look that up – a group of islands in the Pacific Ocean on the east side of New Guinea and zoomed out a little further north-east of Australia. Our geographical knowledge has grown considerably with all those different cocoa origins, but we have never had chocolate from cocoa from the Salamon Islands. It’s great that we can try something new through the Portuguese makers of Feitoria do Cacao (bean to bar chocolate makers in Lisbon).
With this cocoa (100% cocoa, no additives) they have made a beautiful, very ‘full’ 100% chocolate at Feitoria do Cacao. Little acid, but dark taste tones & nutty, in a pleasant balance. And above all a very full mouthfeel from which some flavor continues to be released. As far as we are concerned, it is certainly an interesting fine 100% chocolate, with a very long lasting aftertaste.
Description of the makers:
In the South Pacific Ocean, the Solomon Islands consists of six main islands and about 1000 small volcanic and coral islands, preserving the nature of tropical forests and the diversity of ethnic cultures. Cocoa from the small indigenous villages on the islands of Makira and Vella Lavella, has a soft and naive taste, which reflects the affection of the people and the nature of their origin. This fine cocoa with notes of olive, cashew, cream and coffee, thanks to its smooth and balanced taste, allowed us to create 100% cocoa chocolate, without adding other ingredients.In addition to being able to appreciate the pure and genuine taste of cocoa, this neutrality allows to invent unlimited harmonizations and recipes, including some savory dishes.
