Beautiful dark chocolate from Paquibato cacao from the Philippines.
Fossa previously had a beautiful duo set with this, with two bars that were identical except that one had added cacao butter, and the other did not. That was fun to compare, but now it was time to make one beautiful bar with it – and that became this version – without added cacao butter. Cacao and sugar – nothing more.
The makers say about it:
In the Davao Region, located between tropical mountain forests, the Paquibato farmers’ cooperative practices agroforestry, intercropping and organic farming. The result is flavorful cacao, and the protection of the remaining forest fragments of Mount Apo National Park.
For this lot, a blend of five Trinitario cacao varieties and careful post harvesting techniques produced very pleasing cacao that is flavorful and balanced.
