Umeshu, or Japanese plum wine, is made by steeping unripe green Japanese plums in liqueur. The drink is sweet and sour and is often enjoyed as an aperitif or with soft drinks.
For this chocolate, an umeshu was made using sake from Ota Shuzo in Shiga, which is incorporated into barrel-fermented Malaysian cocoa from the Semai community. The chocolate is made from 72% dark chocolate and has a complex flavor with notes of sweet and sour ume and hints of plum kernel.
Let the chocolate melt slowly on the tongue to discover the different layers of flavor.

When tasting, we found that the umeshu and this chocolate made from cocoa from Malaysia complement each other beautifully. The flavors are actually quite strong, but overall, it becomes subtle and harmonious. Ingredients: cocoa, cane sugar, cocoa butter, umeshu (sake, plum, sugar)
