It’s nice when a small chocolate maker wins a big prize, in the case of Fu Wan a number of medals and the election as the best dark chocolate in the world 2019 at the International Chocolate Awards world final. Great because it generates a lot of interest for the maker.
Among the Canadian chocolate makers of Soma, the selection of their Guasare chocolate last year as the world’s best also had a significant impact. Moreover, their chocolate factory just moved, so everything suddenly went up.
We ordered from Fu Wan just before the awards. And still had completely free choice. That is different after the result, this premium roast is no longer there and the other chocolates almost all seem to be sold out.
Since at Fu Wan they only work with cocoa from the cocoa plantations from Taiwan, they cannot provide a new supply. It doesn’t matter, it has something to wait for something beautiful – we think. In part, that is also the reason why we will never offer ‘ordered today, delivered tomorrow’ in-house guarantees.
Anyway, about this bar. Here too, the same 70% cocoa from Ping Tun Taiwan, but for roasting # 8 the roasting was decidedly different, which also considerably changed the flavor profile.
The taste tones described by the maker: apple, berries, toffee, nuts & coffee.
Compare that with the Ping Tung # 1 70% and you see the influence of scheduling. In short, nice to order together.
