Description
An intense 91% dark chocolate by Georgia Ramon, crafted from the rare Almendra Blanca cacao variety. The name translates to “white almond,” referring to the unusually pale colour of the cacao beans used for this chocolate.
About the cacao
This special cacao originates from a 30-hectare estate managed by Agrofloresta. The farm serves as a training site for indigenous smallholder farmers participating in the Selva Tabasqueño project. In 2014, Hugo Francisco Chavez and colleagues founded Agrofloresta Mesoamericana with the goal of restoring degraded land by transforming it into a diverse cacao forest. Today the estate functions as a demonstration farm for organic cacao cultivation within an agroforestry system that integrates native timber trees.
Only ten local cacao varieties are grown on the farm. These are the result of decades of careful selection of indigenous cacao trees and represent some of the finest Criollo Tabasqueño cacao. Most of these beans are known as Almendra Blanca due to their pale, white interiors. However, the farm also preserves certain Criollo Tabasqueño varieties with purple beans, as they can possess equally exceptional flavour characteristics.
