The makers write about it:
“This Guasare cocoa is grown by the Marquez family in the Perijá Mountains, Venezuela. A rich palate with contrasting notes defines its spicy character.
To bring out the lively character of this cocoa, we have applied 3 roasting profiles to this single plantation cocoa. Each roast accentuates different flavor notes. During milling, the three batches are combined again and ground together for 82 hours. Once that’s done, it’s time to let the batch rest for another two weeks to slowly develop a wide range of flavours.”
Taste note from the makers: Rich palette with contrasting taste notes with a lively and zesty character. Taste notes of coffee, citrus, mandarin, orange, green herbs, bay leaf and licorice.
