For this chocolate, the maker, Karl from Hogarth Chocolate in New Zealand, takes inspiration from his favorite recipes from South-East Asia, and the essence of this comes together with four ingredients in this chocolate bar. With lime, lemongrass, ginger and chili pepper.
A beautiful spicy and fragrant mix combined with soft 66% dark chocolate from Ecuador (Hacienda Victoria).
The creator says “We’ve had a lot of requests to bring back our original chili chocolate bar, but we thought a simple chili bar would be too boring, so we worked on this concept to bring the taste of a Southeast Asian capture curry.
It took us a long time to finish it, but we are very proud of this bar because it is so delicious.
We use Ginger, Chili, Lime and Lemongrass. The initial flavor comes from ginger and lemongrass but develops over time and you get a sense of lime and cocoa, later the heat of the ginger and chilli gives a mild burn, it’s not too hot, just right. ”

I’m so glad to have found somewhere to buy this incredible chocolate in Europe! It packs a good punch of chilli and the ginger and lemongrass are beautifully balanced against the creamy – but not sweet – chocolate. Delicious.
