About the Chocolate
The cocoa used in this bar is produced by Urrutia in Barlovento, Venezuela, and is known as Carenero Superior, a Trinitario cocoa variety named after the historic export port of Carenero. Superior is a traditional quality classification. This cocoa is selected for its optimal fermentation, careful drying, and the genetic purity of the Trinitario beans, resulting in a distinctive and refined flavour profile.
Taste
The makers describe the flavour notes as follows: fresh exotic fruit, lychee, subtle spicy aromas in the background, and vanilla.
We also find it beautifully rich, full-bodied, and deeply chocolatey.
Ingredients
Cocoa mass 60%, cane sugar 30%, cocoa butter 10%. Contains a minimum of 70% cocoa. May contain traces of nuts and milk.
The Makers
Idilio from Switzerland.
Idilio represents a connection with nature, the diversity of tropical mixed-crop cultivation, exceptional care in the growing and harvesting of cocoa beans, and meticulous fermentation and sun-drying processes. In Spanish, the word idilio means a short poem celebrating the romance of life close to nature—a sweet experience, a precious treasure. Idilio’s vision resulted in a numbered series of chocolate bars.
The Cata hacienda cultivates cocoa in combination with other tropical fruits. The estate is located in a stunning setting on the Atlantic coast near Ocumare. The small cocoa farmers have joined together in a cooperative, helping one another with the harvest and processing their cocoa collectively. The Ocumare Criollo variety forms the heart of the intense aromas that this remarkable terroir has to offer.
