Description
Idilio makes two chocolates using ‘Caranero Superior’ cocoa from Barlovento on the North Coast of Venezuela. The ‘regular’ dark variant Idilio 4, but also a second one, and that is this Idilio 8 – the same chocolate but with cocoa nibs.
The small pieces of cocoa nibs are beautifully distributed throughout the bar and provide a nice crunch. A pleasant contrast to the very finely melting bar. And not only in texture but also in taste, it provides an interesting flavorful addition.
Description from the makers:
The cocoa in this bar is produced by Urrutia in Barlovento (Venezuela) and is called Carenero Superior, a Trinitario cocoa named after the historic export port of Carenero. Superior is a historical quality classification. This cocoa is selected based on perfect fermentation, careful drying, and the purity of the Trinitario beans, which ensures a unique and refined flavor profile. Taste
The makers describe the flavor notes as follows: fresh exotic fruit notes, lychee, light spicy aromas and vanilla in the background.
We can certainly agree with that, although we would add that fruitiness is certainly not the first thing that comes to mind with this chocolate. The roasting actually gives a slightly darker tone to the whole, which makes the taste pleasantly rounded. And of course, the cocoa nibs also contribute to the flavor. You simply have to taste it; the cocoa nibs are scattered throughout the chocolate in small pieces, in a very pleasant way as far as we are concerned.
