Not so long ago, hardly anyone had ever heard of good cocoa chocolate from Vietnam. Of course – Marou Faiseurs de Chocolat – has meant a lot from Ho Chi Ming City – although we must say right – there are more – that we should not forget. Anyway, let’s just say that it is very nice that the cocoa from Vietnam is experiencing a small revival – and that very beautiful chocolate is made from it.
This also applies to this 70% from Krak, which has been transformed into a fine bar in Mark Schimmel’s chocolate lab.
This version is made with cocoa from the people who also started the Vietnamese craft chocolate brand ‘T-Bros’ – chocolate makers from Vietnam, founded by Truong Minh Thang and Nguyen Duy Thong. The cocoa is ‘Anh Em B10′ from the 2021 harvest. B10 is the fermentation protocol – the great thing is that they buy the cocoa directly from the cocoa farmers (from the Dak Lak region) and ferment and dry it themselves. This allows them to carefully control the flavor development in the cocoa.
Anh Em Cocoa Co. was founded in 2017 by two school friends – Truong Minh Thang and Nguyen Duy Thong – who share a passion for cocoa and chocolate. After realizing that the quality of the cocoa produced in Dak Lak could be improved, they researched microbial biodiversity and post-harvest processes to optimize the beans’ flavor potential.
This cocoa would become the basis for some of the award-winning chocolates that Truong and Nguyen began producing through their Tbros brand. Anh Em is proud of the quality they have achieved together with the farmers and wants to benefit the producers and their communities even more. That is why Anh Em exports these beans to Europe and the rest of the world.
