So is this B9 variety from Hacienda Betulia in Colombia. Single variety cocoa with many criollo genes and therefore also single estate – from the aforementioned hacienda located east of the provincial capital Medellin.
Then the taste…amazingly complex! Sweet, sour, spicy. Very nice, maybe crazy!
Definitely also (2022 edition) quite astringent, with tannins. That can really come as a shock if you don’t expect it. You will automatically think of pine needles. You have to taste a little fearlessly – and then again – and the adventure can start, and you can start to notice – gosh, there’s the fruitiness, and now suddenly a little spicy flavor kicks in. And hell, will there still be a small subtle coffee flavor? Well, make it your own taste adventure. It may not be chocolate to begin with, the tannins can put you off a bit, but on the other hand you have tasted in one go how powerful flavors can come together and form a beautiful game in your mouth. Discover the pleasure of tasting. So yes, we still recommend it not only to advanced chocolate tasters, but also to those who are starting their chocolate taste journey. But be warned, don’t be alarmed and give yourself some time to get used to this bar.
