Description
A creation by the Vietnamese chocolatemakers of Marou, specially made for the Vietnamese New Year Tết Nguyên Đán, literally meaning “the festival of the first day”, but commonly shortened to Tết.
That said, this chocolate is certainly not only meant for that occasion. It is simply a very special creation that once again showcases Marou’s craftsmanship and their talent for refined flavour combinations.
This is a filled chocolate bar, in which coconut milk, chocolate made from Ben Tre cacao, and tamarind come together. Naturally, sugar is used (including brown sugar), and just a touch of butter to finish it off.
The result is a wonderful chocolate with a caramel filling. The tamarind fits perfectly here, beautifully complemented by the coconut.
The distinctive flavour of tamarind, with its lightly tangy acidity, the creamy coconut chocolate (where the coconut is well balanced and never overpowering), and the gently roasted notes created through caramelisation all come together harmoniously. The cacao itself plays a key role in the overall flavour experience, resulting in a beautifully balanced bar — and one that is dangerously easy to eat.
The jury of the International Chocolate Awards clearly agreed: at the World Final, this creation was awarded Gold, along with a Special Award for Recipe & Local Ingredients.
