From the Limited Edition series of Morin, we also thought it was nice to be able to offer this item: dark chocolate made from cocoa from Honduras.
The maker says about this bar:
“The young cocoa trees are grafted with grafts from the “mother tree”, i.e. a tree selected for the taste of its beans. These grafted cocoa trees therefore produce beans that are similar to the mother tree and are generally more robust and productive. The variety of beans given is Criollo.
The pod harvests are generally done all year round, but the harvest is more abundant between October and June. The beans ferment in their pulp in wooden fermentation boxes. Once fermentation is complete, they are slowly dried on wooden trays under the tropical sun so that they have the most flavour. Drying is a crucial step for the taste quality of the beans. These beans are grown by a group of small farmers in Honduras. The cocoa beans they produce are bought at a price that allows them to live decently.”
Taste description of the maker: notes of toasted almond and sour hints of raspberry and lemon, ends in taste notes of nuts and cocoa.
