Description
When we say that the French maker Morin has ‘something’ with Peru, we are actually doing it very short. We don’t know of any makers who work with more different specific cocoa from Peru than Morin. Perhaps there are still in Peru itself, but certainly not elsewhere.
In the case of this chocolate, it is a pure 70% chocolate with the name Yvan
Made with organic cocoa from central Peru.
“Yvan’s cocoa beans come from the province of Atalaya belonging to the Ucayali region, in the middle-east of Peru. We named these beans “Yvan” in reference to the producer who made us discover this plantation and took care of the logistics .
The culture is done near the Uca Yali River, the climate there is equatorial. It is thus a rainy and humid zone with flat, alluvial and sandy soil. Cocoa beans are grown in the shade. The cocoa comes from criollo, hybrid and native Amazonian cocoa trees. The variety of trees native to the Amazon are wild trees that are propagated by farmers to create plantations. This variety therefore has a great genetic diversity.”
Taste description of the maker: this chocolate gives a mixture of floral and citrus flavors to end with a hint of walnut.
