In addition to the standard range (which is also very special), Naive makes a number of ‘Nano Lot’ chocolates. With specific special cocoa, and therefore logically in small quantities.
In this case a beautiful cocoa from Las Trincheras in Venezuela.
Las Trincheras is a place where cocoa is grown, on an inland road from Puerto Cabello, which is located on the high rainforest hills of the northern Venezuelan coast, in the state of Carabobo. The terrori is known for its many thermal springs that flow into a local river, where the cocoa is grown along the water.
Taste description from the maker: complex, unique. With notes of leather, nutty, creamy and fruity.
Our own tasting experience: wow, the smell already starts well – smells very creamy, very pleasant, and in the taste absolutely indeed dark notes towards leather, cigars. With also something slightly fresh and spicy. The dark flavors seem to disappear but also come back, remains ‘revived’ in the taste for a very long time. And the second time tasting it is just a little different (a little more fruity tones). Beautiful bar!
Pod: local sub-varieties of old criollo, mixed with trinitatio.
Post harvesting: the cocoa beans are harvested from a single plantation and fermented according to a specific protocol. Fermentation in wooden boxes, five days, two turns (2nd and 4th day). With of course constant monitoring of temperature and acidity.
Ingredients: cocoa, sugar.
Allergy note from the maker: may contain traces of milk, nuts and peanuts.
Contents 57 grams.
The price is of course a little higher than the regular versions, but we have done our very best to keep it limited. We also wanted to offer these special bars, actually in honor of our 10th anniversary (but it took a little longer before we could display the bars).
For comparison, in the US this bar is 15 dollars (+-13 euros), and at Naive itself it is also 12 euros.
