Description
91% dark chocolate from Georgia Ramon made from ‘Almendra Blanca’ cocoa, the cocoa variety is called ‘white almond’ after the pale color of the cocoa.
More about the cocoa: “This special cocoa comes from the 30-hectare estate, which is used by Agrofloresta for training of indigenous small farmers who participate in the Selva Tabasqueño project. In 2014 Hugo Francisco Chavez and his friends started Agrofloresta Mesoamericana to convert a degraded site into a diverse cocoa forest, which is used as a demonstration farm for organic cocoa farming in an agroforestry system using local tree species for timber.
Only ten local varieties are grown on the farm, which are the result of decades of selection of native cocoa trees. They now represent some of the finest Criollo Tabasqueño cocoa, commonly known as Almendra Blanca because most of these cocoas have white beans. Since some Criollo Tabasqueño are also with purple cocoa beans and have excellent taste characteristics, the farm does not only keep cocoa beans with white seeds”.
