Huma makes chocolate in Ecuador, often featuring the beautiful Ecuadorian cocoa in their dark chocolates.
This bar is a little different. While it’s also dark, also made with Ecuadorian cocoa, it has a slightly lower percentage and the focus is on the wonderful flavors.
Here, roasted barley, in the form of Máchica (flour made from this roasted barley), and lemon verbena are used to create a beautiful chocolate version of ‘Chapo’, a traditional combination of this barley flour with lemon verbena. While searching for this, which you can of course find all sorts of information about online (though not a great deal), we came across a great video showing how it’s made. Highly recommended. And you can also search for it yourself, of course, using chapo/chapu or machica.
In any case, once you delve a little deeper, it provides a wonderful background that makes you fully understand why these Ecuadorian chocolate makers choose this particular addition. We, for one, are delighted to be introduced to something completely new to us, and to have enriched our knowledge. It’s amazing how that can happen.
It’s also nice that the barley and lemon verbena not only add flavor but also texture.
