Description
Criollo cocoa from the Dominican Republic?
Indeed! We were a bit surprised too. Yet, it’s true. For this special cocoa, a partnership was established with the cocoa farm ‘La Magdalena’, where they grafted Criollo cocoa onto a base of existing local cocoa. This creates true Criollo, but from a base of the local hybrid cocoa tree. A beautiful experiment, and as we understood from the maker when we were at Chocoa, it’s a truly small quantity, and the cocoa even went on the plane in our luggage.
“A signature bar of London Chocolate and an extremely rare gem. This is a single Criollo strain, grafted to ensure the preservation of its genetic qualities. Produced in small quantities on a small farm in the Dominican Republic, with a custom London Chocolate fermentation. Cream, walnuts, dried fruit, a hint of yogurt, with a mango-caramel flavor.”
