Beautiful dark chocolate from A. Morin – made with cocoa from Esmeraldas Ecuador.

Also nice to take a dip in history and read C-spot’s review of this chocolate, awarded five stars there in 2014. With about the taste “fruit flash (papaya) -> then fast forward to damn unusually good flowers-in-chocolate (the musk of white peony / the spiced fig of frangipani) -> brownie that erupts to black, but not charred, chocolate- mulberry (damn unusual #2) -> pepper (totally tingling, not pungent or hot) -> full choc-o-lot (a growing theme) -> another quick fruit spot (persimmon, with micro-sedation, to hook up at the earlier peppering) -> withdraws at soft spices (including the fragrant coumarin) -> black cream (dig it) -> black apricot appearance”

Now, of course, every harvest will be different – and therefore, by definition, every chocolate – and C-spot makes exceptionally detailed descriptions of what is tasted. But then you at least see how extensive some chocolate connoisseurs can taste, and what there is to discover.

Morin himself keeps it a bit more limited in the description of the taste (fortunately! We would say).

Taste description of the maker: this chocolate has character: floral, spicy and as a twist hints of unripe walnuts.

As chocolate sellers, we also find the taste absolutely thrilling – there’s a very nice sequence of flavors that alternate in rapid succession and a very gentle sweetness that holds it all together. Fruity, floral, spicy, yes absolutely everything. Adventurous and delicious! And always a good sign as far as we’re concerned: a taste that lingers for minutes.

Background on the maker’s cocoa:

“This cocoa grows in the northern part of the province of Esmeraldas, which is covered by a tropical forest. The villages are mainly located on the banks of the rivers and the traditional means of transport is the canoe. The cocoa tree is a tree native to the region and has always contributed to the economic support of communities These beans come from a short circuit, in fact we buy them directly from the producers.

This cocoa is grown in agroforestry, in the shade of different tree species such as mango trees, banana trees, coconut palms, orange trees and wood trees. Cocoa is grown in a traditional way and the pods are yellow and grainy in appearance. There is very little cultivation of Trinitarios cocoas, this zone offers almost no mixture of varieties. We find the “Nacional” cocoa, highly appreciated and known for its characteristic “arriba” taste. It is grown exclusively in Ecuador and constitutes only 2% of world production.

There are 22 collection centers for fresh cocoa beans where farmers can drop off their beans two days a week and receive immediate payment based on the weight delivered. A canoe or truck takes the beans to the processing center after harvest. There, the beans are then fermented, dried and packaged.”
