Description
This chocolate is a “touski” made from various 70% chocolates by Palette de Bine (“touski” is an informal French shortening of “tout ce qui,” literally meaning “everything that…” or “whatever is included”). What makes this bar special is the addition of the new Sel Saint-Laurent sea salt from Grandes-Bergeronnes!
This unique salt is produced from water drawn from a depth of 200 meters in the St. Lawrence River estuary in Quebec. The water originates from the Arctic region and is exceptionally pure. The salt has a distinctive and refined flavor and is less iodine-forward than many other sea salts.
Do not expect pronounced fruity notes or the highly complex flavors often found in single-origin chocolates. Instead, this bar offers a beautifully balanced dark chocolate experience, with the distinctive Quebec sea salt enhancing the cocoa without overpowering it.
