A light-coloured chocolate with subtle notes of honey and blueberries.
This bar is made from unique cocoa beans, namely the Peruvian variety ‘Pure Nacional’. For a long time, this cocoa variety was believed to be extinct, but in the 2000s a small group of farmers was discovered in the Marañón Valley who were still growing these ancient cocoa trees! This valley has a unique microclimate with significant differences in altitude. Another remarkable feature: these cocoa beans are white or purple in colour! This is because they contain very little anthocyanin, the pigment that is normally responsible for the dark colour of cocoa and is often associated with more bitterness and astringency. As a result, the flavour is often milder and softer than that of other cocoa varieties.
Palette de Bine gently and slowly roasted these beans to preserve the naturally delicate aromas of this cocoa and avoid creating roasted flavours. The result is a surprisingly smooth and elegant 70% dark chocolate bar!
