The cacao in this bar comes from Chanthaburi in Thailand, sourced via Thai Cacao Distribution. Read more about it at https://www.uncommoncacao.com/pages/thailand. The flavour is lively, sweet, spicy, and full-bodied with a slight tang.
The added white tea (Gisovu) comes from a very high-altitude region of Rwanda, and this elevation results in highly refined, slow-growing tea leaves. This tea comes from the same plant as black tea (Rukeri), but is processed very differently, resulting in a completely different flavour profile. The white tea used here is very fruity and honey-like, providing a beautiful delicate counterbalance to the intense flavours of the cacao.
