Palette de Bine is a chocolate maker from Québec, Canada, producing true bean-to-bar chocolate. Every step of the process—from selecting the cocoa beans to molding the finished bars—takes place in their workshop in Mont-Tremblant. Working in small batches, they place great emphasis on highlighting the unique flavor profile of each cocoa origin. These exceptional beans are often paired with local Canadian ingredients to create distinctive chocolate bars. This bar, for example, combines wild Bolivian cocoa with Canadian maple sugar. It has won multiple Gold Medals at the International Chocolate Awards.
The cocoa comes from the forests of Iténez in Bolivia, where cocoa trees grow naturally in the Amazon rainforest rather than on plantations. The beans are harvested only once every two years because the region is so difficult to access, making this cocoa quite rare.
These beans are also unusually small and have a thin shell, which makes roasting a particularly delicate process. Temperatures that are too high—or just a few extra minutes of roasting—can easily mask the subtle notes of exotic fruits and flowers with overly roasted or bitter flavors. For this reason, the cocoa is gently roasted to preserve the bean’s natural character and distinctive flavor profile. Not only is the harvest special, but so is the craftsmanship required to process this unique cocoa.
Naturally, the cocoa offers vibrant notes of exotic fruits such as passion fruit and mango, which shine through beautifully when tasted. The Canadian maple sugar adds a subtle caramel-like sweetness. Because maple sugar is generally less assertive than cane sugar, the cocoa’s own flavors remain clearly present. Together, they create an elegant balance of fruitiness, sweetness, and rich cocoa intensity.
