Description
Palo santo is an aromatic wood from the tree Bursera graveolens, which grows in parts of South America (including Peru, Ecuador, and Bolivia). The name literally means “holy wood” in Spanish. The wood naturally has a strong, warm aroma that is often described as sweet, woody, with notes of citrus, vanilla, and light smoke. It is traditionally used as incense or in rituals, but nowadays it is also found in perfumes, scented candles, and sometimes in food products such as this chocolate!
The Thai chocolatemakers of Paradai have created a special 65% dark chocolate bar with “palo infusion.” The wood is not a literal ingredient in the chocolate bar, but it is used during the cocoa processing so that its aromas are absorbed. The result is a full cocoa flavour with a soft, warm woody smokiness and a lightly spicy, sweet-resinous aroma that adds extra depth to the chocolate. You may also detect notes of star anise, cinnamon, cloves, coriander seed, and black pepper! In our view, this is a very interesting and complex flavour experience, definitely worth trying.
Ingredients: cocoa beans, cane sugar. Minimum 65% cocoa. Contains no traces of soy, nuts, or lactose.
