Description
Where many makers have a nice diversity of origins in their 70% chocolates, Sirene is one of the few to have a range of 100% chocolates. And we like that! Where we ourselves in our journey of discovery in chocolate really had to get used to 100% chocolates (and sometimes still do), we also appreciate it. And we are also very happy to see that there is a solid group of fans among our customers who love it even more, great.
After the ‘regular’ 100% from Sirene (with cocoa from Tanzania) came the Uganda 100% and now also… this Guatemala 100%.
The agreement is a very fine soft chocolate, although this Guatemala may have the most ‘pit’ thanks to a little more / sharper acidity, but also here still quite accessible when you consider that it does not contain a gram of sugar, only cocoa. There are also some other taste notes – something slightly nutty (almond?) somewhere, also a bit sharper nutty like unripe walnut, maybe something floral somewhere, but certainly also some sour and roasted taste notes.
And of course very nice to taste together with the other Sirene chocolates. We also have to name the smell, as enchanting!
