Nice special edition of Sirene. Pataxte (Theobroma Bicolor) is covered in pieces with caramel and thus combined in a dark milk chocolate made from cocoa from Uganda.
The pieces of Theobroma Bicolor are white in color and have a characteristic floral taste, but we must honestly say that they are small pieces and the caramel and milk chocolate predominate. It also depends on the snack, because they are pieces and therefore (as is usually) not quite ‘fairly’ distributed over the bar. The caramel is strong, in a pleasant way, and the whole has a lot of sweetness despite the rather high (60%) cocoa percentage of this milk chocolate. Sweet, subtle flavor combinations, pleasant.

One of the great benefits of working directly with cocoa growing farms is the availability of working with unusual and rare species or varieties. Cocoa trees have many cousins, both in the same species and in different varieties. We are used to thinking of chocolate as brown or black, but Pataxte beans are pure white. They also have a particularly floral taste, which when combined with cocoa – as we did in this caramelized Pataxte bar – can create quite a striking and interesting contrast. We coated Pataxte’s white nibs with caramel and dipped them in dark milk chocolate made with Semuliki Forest, cocoa beans from Uganda. The flavors of the cocoa and the floral notes of the Pataxte contrast nicely to give a pleasantly complex taste.
