Oh, how we were looking forward to this chocolate when we saw that Pump Street Bakery had made it. We love to have a Pain aux Amandes when we are cycling in France. As most of you know, we cycle every holiday, and France is a destination that we visit quite often, and the quality of what is in the bakeries is a factor that counts. The ideal is that we are actually cycling all day on such a day, with a few stops to admire nature. Then you can also eat a lot, and a stop at a bakery for something tasty and a nice loaf of bread is part of every day, of course depending a bit on the environment. A ‘normal’ croissant, however classic, we usually skip, but a pain au chocolat and certainly pain aux amandes make our mouths water. A well-baked delicious dark bread is just as much, by the way, or a nice special pastry.
Anyway, Pump Street is a chocolate maker in Suffolk, UK, but they are also bakers. And we are very pleased with the beautiful things they make, combining both crafts.
They already had a croissant chocolate (delicious), a sourdough bread chocolate, a rye milk chocolate and so much more, but now also a chocolate with pain de amandes or with croissant and almond. And that is delicious again.
A light milk chocolate (38% cocoa) with cocoa from Togo (Kekeli Coöperatie) that goes together beautifully. Well, go and experience it, we would say. It will be very difficult not to eat it all at once.
Ingredients: cane sugar, cocoa butter, croissant (tawer flour with extra calcium, iron, niacin, thiamine, milk, sugar, butter (milk), yeast, salt, malt, egg), cocoa beans, whole milk powder, skimmed milk powder, almond (6%).
