Innovative, you could even add, as they are one of the few makers who press their own cocoa butter. This way, they guarantee the origin and quality of not only the cocoa beans but also the cocoa butter.
In this case, they have managed to create a beautifully smooth 100% cocoa from cocoa grown in Hacienda Limon in Ecuador. The cocoa is classified as HCP cocoa; read more about that here.
