To make a wonderful cup of hot chocolate, Pump Street has something truly special: this tin of drinking chocolate. Not cocoa powder, but shaved chocolate—in this case, 85% cocoa from Hacienda Victoria in Ecuador. With flavor notes of black cherry, jasmine, and roasted walnut.
From the same maker, we also have 70% chocolate for hot chocolate with cocoa from Papua—for when you prefer it a bit sweeter, and with other flavor notes. Because you can, of course, vary the sweetness yourself—just add a little extra sugar if you like.
A tin like this (200 grams) will certainly cost you a bit more than a package of cocoa powder from the supermarket, but it’s also something completely different. By the way, you don’t need to look in the supermarket for cocoa powder (that jet-black alkalized stuff, chemically processed to make it taste even remotely decent). We also have beautiful forms of it, which are simply pure and natural, and we also like to use it occasionally to make hot chocolate, for example, Marou’s cocoa powder. We do add sugar to that ourselves. But it’s also really fun to make hot chocolate with chocolate and not just cocoa powder, for a nice, full flavor—the cocoa butter makes it even richer. And yes, you can also shave a chocolate bar or melt it into small pieces, which works fine too, but then you’d need three Pump Street bars for this amount, and then the price quickly adds up. That’s why we’re so happy they’ve created these beautiful tubs of drinking chocolate—yes, it’s still pricey, but making a special cocoa drink every now and then is worth something too. And of course, from single-origin, fair-trade cocoa, that’s also worth (quite a bit), especially when you consider that the cocoa in chocolate milk is of the very poorest quality, and often contains very little, even in supermarkets.
Not just single-origin, by the way, but even single-farm—because it comes from one specific cocoa farm, which is extra special.
