From Sirene, craft chocolate from Victoria, Canada (since 2013), another beautiful creation.
This bar is made with Alto Beni cacao, the first cacao in the world to receive the Heirloom Cacao designation from the Heirloom Cacao Preservation Fund — the organisation dedicated to protecting rare, ancient cacao varieties. The cacao originates from the Alto Beni region of Bolivia, a lowland area with exceptional biodiversity, where cacao was originally found growing wild among other rainforest trees in the area around the Beni River.
Flavor notes as we experience them: pleasantly sweet, raisin-like, slightly dry (but in a way that is not unpleasant), mildly spiced, leaning toward apples with cinnamon. Pleasant overall.
Flavor notes described by the maker: rich flavours of deep fudge with dried fruit, honey, and coffee.
