Another beautiful chocolate from Standout’s limited edition range, the Principe Roça Sundy.
As always with (extra) special cocoa, this time from the archipelago of São Tomé and Príncipe, and more specifically from the island of Principe.
The makers say about it:
The island of Príncipe is a volcanic gem off the coast of Central Africa, boasting a stunning array of microclimates and biodiversity. The combination of volcanic soil, tropical humidity, and lush rainforests creates a one-of-a-kind terroir that shapes the flavor of its cacao. With an annual rainfall average over 1,500 mm and a mix of lowland and montane forests, Príncipe provides an ideal environment for cacao cultivation. The island’s cacao tree is predominantly Amelonado, a Forastero variety introduced during Portuguese colonization.

In our initial tastings, we found it to be a rather nice classic chocolate—it doesn’t go in ten different directions, nor is it a symphony of successive flavor nuances, but rather more straightforward—but beautifully done. Especially nice if you don’t appreciate chocolates with, for example, fruity flavors, but are looking for a well-crafted chocolate with more traditional flavor notes we associate with “chocolate flavor,” where a nuttiness and sweetness definitely enhance the “chocolatey” taste.
