Fredrik from Standout surprises us every time with some beautiful limited editions. He’s always created a wonderful range of pure origin chocolates (of which Belize is the most popular, thanks in part to the awards this bar has received—though that actually applies to more bars) that we appreciate for their vibrant flavor—perfect for using or recommending for a tasting. But in recent years, he’s also made an extra effort to collect some special cocoa varieties in small batches, to create more limited edition chocolates. The two varieties of specific cocoa from Piura, Peru, and Indonesia were a real hit in our opinion. And we’re happy that they’re being followed up with two new limited editions.
In this case, it’s a chocolate made with cocoa from Auro in the Philippines—in addition to being chocolate makers (we’re happy and proud to sell their chocolates), they also actively collaborate with cocoa farmers to promote other makers of beautiful cocoa from the Philippines.
And so, this ‘Mana’ cocoa from the Saloy Estate, from the 2024 harvest, finally ends up at Standout in Sweden, where they create something beautiful that beautifully brings out the cocoa’s flavor notes.
In this case, the makers describe the flavor notes as: dried fruit, nutty, and floral.
Finally, you’ll find information about how the cocoa was harvested and fermented, which you can find on the packaging—nice to know.
