A cocoa variety with a remarkable story! Standout describes it as follows: “Less than an hour from Monte Grande, the archaeological site where the oldest evidence of cocoa use has been found, there are still farms with old native cocoa trees. In 2022, the Peruvian cocoa association APPCACAO launched an ambitious project: the first origin denomination for cocoa in Peru. Within this project, farms are selected that have old native cocoa trees, farm sustainably, and provide the proper post-harvest treatment to achieve the specific flavor profile defined in the origin denomination certificate. The cocoa used for this chocolate comes from the very first harvest of this special project.”
The cocoa comes from a mid-altitude region (400–750 meters) with high biodiversity: citrus (lime, mandarin, grapefruit), tropical fruits (mango, papaya), and even coffee and tamarind growing in the same environment as the cocoa trees. You can taste this in the chocolate as well: a deep cocoa base with fruity notes and also a subtle spicy/nutty character.
It’s also great fun to compare it with Standout’s other 70% bars, so you can really taste the differences between cocoa regions!
