The shell of the cocoa is also used. And rightly so, because it has a beautiful taste and is special to taste, especially when it comes to good cocoa, the shells also give off a beautiful taste.
Just for those who don’t know: cocoa is a fruit, for chocolate you use the (fermented) seeds. You roast them and before or after roasting you make sure you remove the shell from the stone. You don’t want that shell in the chocolate, for the structure and taste, but it is wonderfully suitable for making tea. That’s what To’ak does, with their cocoa that is made entirely into chocolate in Ecuador. And rightly so. A shame to throw away (which happens a lot) and certainly nice to taste. For tea lovers, cocoa lovers, and for someone for whom you are looking for a special gift. Or of course to order with it if you already order a nice chocolate from To’ak (or one of the many other great makers in our range).
Ingredients: 100% cocoa shells.
How do you make tea from that? No worries – the maker puts instructions on the packaging – both for a regular hot tea and for a cold brew. Great.
Fun fact: we once also received cocoa shells, from cocoa from Venezuela, from Tibor Szanto. We kept them for years and used them for our anniversary in a beer that was brewed to mark the occasion. Also nice: from Rozsavolgyi we have a chocolate in which the entire cocoa fruit is used, including the shell and the cocoa pulp (the flesh).
