This specimen is extra special because it is the first in the world made from cocoa from the Galapagos Islands. And if you don’t know it, the islands are politically under Ecuador. Taste note from the makers:
Nose: Cinnabon, raisins, whole wheat.
Palate: Cookies & fudge, nutmeg, brown fruits.
Finish: Caramel, cinnamon, sweet bread.
Ingredients: cocoa 75%, cane sugar.
Pairing suggestions from the maker: “Kelt Cognac is particularly suitable. Zacapa 23 Rum always works. Añejo Tequila, especially Casamigos and Don Julio. Irish whiskey, Scech from Speyside, a number of high-quality Bourbons and Japanese whiskey can all pair well. For cheese, anything but goat cheese – goats are invasive in the Galapagos. ”
