A fine dark chocolate from cocoa from Hacienda Betulia Colombia. From a specific cocoa variety with the not-so-glamorous name ‘B6’. As with all Zoto chocolates, they developed the fermentation protocol for this cocoa themselves, from their work as fermentation experts, for which in this case they traveled to Colombia to work together at the hacienda’s request to see what the optimal fermentation was for this specific cocoa is.

What the makers say about it: “This chocolate bar is made from hacienda Betulia white beans. Don Pablo Velez, the cocoa producer of this authentic hacienda, is deeply committed to producing the best possible cocoa beans from Colombia. Thorough genetic and sensory analysis of wild local varieties on the farm led to the reproduction of three genetic varieties that produce pure white beans: B6, B8 and B9.
ZOTO got involved after 7 years of work, when the cocoa production volume of those 3 special varieties reached a level where entering the market became relevant. We have helped fine-tune the fermentation protocol for 1 year and are convinced that Don Pablo has all the skills to independently follow up the post-harvest processes to supply exquisite beans to the fine flavor market. We chose the B8 variety as it has a unique flavor profile and is very limited in volume. Our chocolate is 70% pure chocolate, with the appearance of milk chocolate due to the white beans. Fermentation: 5 days in boxes (60kg), 6 turns
Drying: 14 days, in the sun, wood.
Roasting: 130 degrees, 18 minutes.
