Beautiful dark chocolate with sweet and spicy flavor notes, made from cacao sourced in India—specifically from a single cacao farm in West Godavari.
Fermentation: 7 days, box fermentation, 3 turns
Drying: 48 hours pre-drying, followed by 8 days sun-drying
Roasting: 120°C, 18 minutes
Flavor notes (according to Zoto): cinnamon, nutmeg, cardamom, tamarind
Ingredients: cocoa beans, cocoa butter, beet sugar (65% cacao, 5% cocoa butter, total 70%)
Store in a cool, dry place. Net weight: 45 grams.
Zoto always includes “slow melt” with their tasting notes to emphasize that chocolate should be allowed to melt slowly for a fuller flavor experience. You don’t need to identify each specific note they describe—it’s not a sport or a competition—but most people will experience this chocolate as subtly spiced. It is also relatively sweet for a 70% chocolate, with an overall pleasant and approachable profile. With each bite, you may notice slightly different nuances. Taste it in your own way, but giving it a bit more attention—and therefore a slower tasting pace—does justice to this chocolate, as with all fine chocolate.
